Organic Pinto Beans are a Tex-Mex and Mexican kitchen staple, best known as the base for refried beans but equally good whole in chilli, burritos, bean salads and slow-cooked stews. Their mottled pink-and-brown skin fades to a soft, creamy beige once cooked, with a mild, slightly earthy flavour that takes well to spice and smoke. Like most dried beans, they need soaking for at least eight hours, or overnight, before simmering until tender. Certified organic, vegan and gluten-free, with no added sugar, they're an easy way to add plant protein and fibre to everyday cooking. Once cooked, they mash easily for refried beans or dips, and leftovers keep well in the fridge for a few days. Store the dried beans in an airtight container in a cool, dry place.
